Our single-origin raw thyme honey is sourced straight from the beehives on the pristine Greek island of Kythera. One of nature’s superfoods, honey is rich in antioxidants and phytonutrients, as well as digestive enzymes, local pollens, propolis, amino acids, vitamins and minerals and probiotics.

Thyme honey pairs beautifully with warm bread and butter, can be drizzled over fruit and yoghurt, and is often used to sweeten tea and other beverages. Our honey is so pure and unadulterated that it will keep indefinitely, without crystallizing if stored properly. Due to honey’s composition, which absorbs moisture, please use only fresh utensils, seal the jar when not in use, and store it in a dark area, ideally within a temperature range of 65 to 75 degrees Fahrenheit. In order to maximize the health benefits of consuming raw honey, we recommend the use of wood or bone utensils. It is best to avoid prolonged metallic contact with honey (quickly scooping it with a stainless spoon is fine).

Kytherian thyme honey is highly regarded throughout Greece, and globally recognized, due to its complex, robust, and aromatic flavor, which we would characterize as sweet, fragrant, and herbaceous. It has a dark amber color and a rich, viscous consistency. We do not pasteurize, heat, process or manipulate our honey in any way. As a result it retains all its natural properties.

The supply of Kytherian thyme honey is very limited, as are our micro batches. It is considered a delicacy on the island, and we promise our quality strives to be the best of the best.

We recommend consuming one teaspoon of honey daily, in the morning, for a boost of energy and to promote health and longevity. Of course, thyme honey pairs beautifully with warm bread and butter, can be drizzled over fruit and yoghurt, and is often used to sweeten tea and other beverages.

Due to the climatic conditions that prevail in Kythera, the local thyme often blooms from the beginning of May and flowers continuously through the end of summer. We typically collect our honey at the end of July when the bees are at their most industrious (and to leave them enough for their own consumption).

Kytherian thyme honey is famous for its quality, due to the high concentration of thyme anthers, which can often exceed 70%. While thyme is particularly popular with our bees, we also find hints that they have been foraging on local spearmint, milk thistle, and throumbi.
